I’m not much of a cook, but do have a few things that I enjoy making and surprisingly others seem to enjoy eating. This is an easy pasta salad that you can make in just 20 mins and is packed with healthy ingredients.
1) 1 lb. pasta, I use whole grain pasta or I recently found Ronzoni Garden Delights, which is infused with vegetables, great way to get kids to eat them!
2) 2 Tomatoes, halved and quartered
3) 2 cloves fresh garlic chopped
4) 1 package of frozen peas
5) 1 Can of black olives
6) 1 Lemon
7) 2 tbsp. olive oil
8) 1 cup Fresh basil
9) 1 cup Feta cheese (optional)
Instructions: Cook pasta, poor package of peas into colander and drain the pasta over the peas (this will cook the peas). Transfer pasta and peas to a large bowl. Add tomatoes, garlic, olives, basil and mix together. Cut the lemon in half and squeeze juice over the pasta, then add olive oil and feta cheese. Stir until well combined.
To make this dish more of a meal you can add grilled chicken or shrimp. The beauty of it is you can improvise as much as you want, I added yellow and orange peppers last time I made it. It’s a great way to eat fresh vegetables.
